Guys

I'm thinking of making a lobby this Sunday just for the sheer hell of it,
I've never made one before. Has anyone got any favourite recipes or
favourite items they always put into a lobby

I was thinking of starting with beef and working from there

Well that's a good start. :-)

If memory serves, mum's lobby used to have cubed beef and potatoes,
sliced carrots and chopped onion. And a couple of oxo cubes. But no
thickening, the stew was very runny.

She used to serve it to me in a pudding basin and I'd soak up the gravy
with white bread soldiers. Then I'd eat the potatoes, carrots and save
the meat til last.

An old flame's mother used to add pearl barley but I hated that.

With my Mum it was always made with minced beef never cubed and never any
barley. I think the barley is a regional thing as in previous conversations I
have had on the lobby topic it seems some areas of the Potteries add it and
other areas don't. My ex-sister-in-law always added it (she originated from Ball
Green) but Mum, born in Burslem, lived for a while in Tunstall and then moved to
Bradwell didn't.

When we make it over here in Canada we used ground beef, taters, onions, carrots
and OXO cubes, with water to suit.

That is fairly close to mine.
You can add cabbage (Chinese is best) or leeks to improve the appearance
and content and the taste can be enhanced by some curry flavouring,
especially the Asian (ie not Indian, though I like that too) variety.

A pressure cooker is best: begin with the onions, frying them in it
until light brown, then add the beef, until it's no longer red, then add
the other ingredients and about a litre of stock and close the lid.
Stand back for 30 minutes or so, and open gingerly (you can add ginger,
herbes de Provence, garlic or whatever - it^s a stew).
Mmmmm. I'm hungry already.... Have to make some tomrrow myself.

Half a pound of chopped beef, carrots, parsnips, potato, swede, onion. Put
everything in a big saucepan, cover with water, bring to the boil, add 2
oxo cubes, simmer for 3 hours. Add salt and pepper to taste. Eat with
bread (dunk the bread in the liquid).

None of the measurements are critical but you do seem to need all the
ingredients or it doesn't taste right. Any rubbish beef will do (Tunstall
indoor market actually has somebody selling something called 'lobby meat').

Optionally, add a can of peas or mushy peas towards the end.

I'm going to have to ask my mum how she made it now. I remember the veg
were still veg shaped but I wouldn't have thought there would be much
left of potatoes after three hours!

"Newcastle Brown" or even œ Red wine, œ water. Very Yummy ;-))

Wine? Bit la-de-da for Stokies and I don't think I would like the idea of
putting Newcastle Brown in either. Seen too many lobbies made with Newcastle
Brown on the pavement in the town centre on Sunday mornings.
